Chicken and Mushroom Wrap

1 lb chicken thighs, skinned and boned
1 lb mushrooms, diced
1/2 cup minced onions
3 tbsp. olive oil
flour
1/2 cup barbecue sauce (e.g. The Fire Chief)
1/4 cup water
8 corn tortillas
Heat olive oil in a medium frying pan. Dredge the chicken
pieces in the flour and fry until well done and golden brown.
Remove from the pan, cut into bite-size pieces and set aside.
Saute the mushrooms and onions in a medium nonstick frying pan
without oil until the mushrooms are rendered down and have
released all their liquid. This will take about 8 minutes.
Add the chicken pieces to the mushrooms in the nonstick pan and
cook until heated through. (Using a nonstick pan will keep the
chicken from browning further.) Combine the barbecue sauce and
water. Add to the pan and stir well. Cook this over medium heat
until the sauce begins to thicken and caramelize.
Warm the tortillas in the oven or a tortilla steamer. Place
equal amounts of chicken and mushrooms on each tortilla and wrap.
Serves 4.
